These were SO good! I found lobster tail meat chunks at my local grocery store, poached them and used in the sandwich. The brown butter with lemon juice is sublime.

Oh my goodness I feel like I’m back home in New England. As an American transplant in Australia, I’m always looking for ways to reconnect with my memories and this takes me back to summer beach afternoons. Australian lobster varieties are nothing like their Maine counterparts; they have no big claws, just tail meant. And it is ridiculously expensive here – close to $100 for just tail meat. With all the shut borders due to COVID all the good seafood isn’t leaving Australia and is cheap. Picked up 3 lobsters at the local grocery store for $20/lobster and made these for Father’s Day (it’s the first Sunday in September here in Australia) and both my husband and I fell in love. Thank you for this delicious slice of home.
