Excellent! I crushed the peanuts. You could probably add some peanut butter into the heated sauce for some more flavor.

We love this Thai salad! I followed the recipe with everything in it, only thing by accident that I changed was the red pepper. I can’t eat real spicy foods. I wanting to put just one teaspoon of red pepper in, I put in 1 Tablespoon. But it turned out great and we added the next day grilled chicken. Easy recipe and great summer salad.

Thanks for a different twist on pasta salad. After reading reviews I added some freshly cut matchstick carrots (dropped them in the oil to soften with the aromatics) which I think were a great addition. Next time I think I’ll stir in a couple of spoonful of peanut butter-it plays well with the soy/sesame flavor profile and will give a bit of ‘oomph’ to the sauce, hopefully helping it to stick to the pasta a bit better.

So good! I served with frozen precooked shrimp mixed in to make it a meal, and lime wedges. I think next time, I’ll add some garlic to the sauce, too. Either way, it’s delicious.
